

Paella
"Rice with seafood and a tomato, onion and garlic base. Meat can be added or veggie versions made. Each region of Spain has its own version; the black rice with squid ink looks particularly weird to non-Spaniards but is delicious. One thing to get right is the cleaning of the shellfish to make sure no sand, grit or 'off' items get fed to the diners."
