
Our competition to find national or regional dishes from around the world to stand alongside Robert Burns' "honest" haggis elicited an impressively varied response. Entrants from no less than 32 countries sent in their culinary suggestions. Some included recipes, others fascinating background information; not all are serious. One contributor even composed an "Ode to England's Fish & Chips", with unnecessary apologies to the Scottish bard.
Not all of the food will appeal to everyone – the pleasures of eating have always been according to taste – but there is no shortage of variety or inspiration. The familiar is mixed with the unfamiliar with some dishes, it has to be said, leaving a lot to the imagination. Although the challenge was to recommend a main course, a few submitted cakes and desserts or dishes that might make an interesting starter or snack. All bring something to this global feast of simple, honest food.
From fried turkey testicles to Mother's Meatballs, from a pudding made with weeds to a soup you can cut with a knife, this is a roller–coaster of a gastronomic ride. Choose a country and tuck in. |
