"Baby dock leaves (grown on the side of railway embankments) destalked, chopped and boiled down to a spinach–like substance. Add a sprig of nettle to garnish. Served with tripe, bacon and fried eggs. A Yorkshire culinary masterpiece. The world dock pudding contest used to be held at Mytholmroyd in West Yorkshire, where my father and I competed with our dishes. Unfortunately the baby docks only grow in certain places so where I currently live I can no longer appreciate this masterpiece."
