Yeast
Yeast is used in the fermentation process to
convert the sugar in the wort into low-strength alcohol, known
as "wash". The fermenting liquid bubbles up quite violently
and, in earlier times, men would beat it with sticks of birch
wood to prevent it spilling over the side of the washback. Nowadays,
mechanical blades keep the rising froth in check. See
